Abstract
Dynamics of ascorbic acid (AC) in apple fruits which grown in the Republic of Abkhazia was studied. Contents of AK varied considerably within groups, divided by maturity. The content of AK in the apple fruits differed substantially within groups of different maturity. The high content medium term varieties were marked. The fruits of the late period, in which the processes of ripening are take place in the period of noticeable water deficiency are characterized by a lower number of AK. The contents of AK was depends not only on species characteristics, but also on the prevailing meteorological conditions of the growing season, variability of symptom large.
